"Carbohydrate entries disappear from Carbohydrates view after absorption/day change" #2499

Description

@valyxdanny98-hub

Describe the bug
I built Loop from source and installed it through TestFlight using my own Apple Developer account.
After entering carbohydrates in Loop, the entry is visible in the Carbohydrates screen while it is active. However, after the absorption is completed or after the day changes, the entry disappears from the Carbohydrates screen.
Example: I entered a meal with 50g carbohydrates and set the absorption time to 4 hours. The meal was visible in Loop while it was active. After it was fully absorbed and the next day started, it was no longer visible in the Carbohydrates section.
The carbohydrate entry is still present in Apple Health and Loop correctly used it for insulin calculations. The issue is only that the carbohydrate history is no longer visible inside Loop.
In my previous Loop installation, I could see carbohydrate entries from previous days in this section.
Attach an Issue Report
Attached: Loop Issue Report generated from Loop Settings → Issue Report.
To Reproduce
Open Loop.
Press the "+" button and add a meal with carbohydrates.
Set an absorption time (for example 4 hours).
Wait until the carbohydrate absorption is completed or until the next day.
Open Loop → Carbohydrates.
The previous carbohydrate entry is no longer displayed.
Expected behavior
I expected the Carbohydrates section to keep showing previous carbohydrate entries as a history, including entries from previous days.
This history is useful to review absorption times and adjust carbohydrate absorption settings for different foods.
Phone
Hardware: iPhone 11 Pro Max
OS Version: iOS 18.5
Loop Version
Version Number: Loop 3.14.2 (57)
Repo: LoopKit/Loop
CGM

Additional context
The Loop application was rebuilt from scratch with a new Apple Developer account and installed through TestFlight.
The previous Loop installation was created under another developer account.
The new installation works correctly:
Dexcom readings are working.
Omnipod DASH communication is working.
Insulin delivery is working.
The issue only affects the visibility of carbohydrate history inside the Loop Carbohydrates screen.
