Create setup for end to end tests

General description

It should be possible to write end to end tests for the API endpoints and run them with a npm script.

Things to notice

I think better would be to have a separate folder for these tests.

I was adding a setup for such tests and it is possible that the test:e2e script from the package,json still works, you can use this as a base.

Supertest/Jest instead of Cypress is the way to go on this one.

Baseline setup is working in-place locally, just need to figure out how to make it AltZone-favorable.
