Consolidates documentation from 4 stale public API docs PRs into one mergeable PR:

• PR Document webhook docs #185 (wayfair-docs): Comprehensive document processing webhook documentation
• PR docs: document line hold type #314 (bugfix/document-line-hold): line hold type documentation
• PR [CHORE] add current status filter docs #221 (current-status): current_status filter docs for containers API
• PR [CHORE] add docs for initial_custom_fields #299 (sinan/dev-10929-...): initial_custom_fields - already merged to main, skipped
