[Hotfix] improve REST+Lance catalog correctness

Why are the changes needed?

Close #4280.

Brief change log

• Fixed the three issues mentioned in the review [AMORO-4280] Add support for Lance format on REST metastore #4334

How was this patch tested?

• Add some test cases that check the changes thoroughly including negative and positive cases if possible

• Add screenshots for manual tests if appropriate
  The image below demonstrates that when you select the “iceberg” table format, configure parameter values, switch to the ‘lance’ table format, and then revert back to the “iceberg” table format, the originally configured parameter values are not cleared.
  1、Select “iceberg” and configure the parameter values

2、 Switch to lance 3、 Returns the “iceberg” format; the previously configured parameter values remain unchanged.
