chore: pin GONZALO_VERSION to 0.2.0 - #1

gonzalo v0.2.0 was released (ghcr.io/caliban-ai/gonzalo:0.2.0 published:
0.2.0, latest, sha-d9f988a). Bump the pinned image tag in .env.example — the
only live pin; compose.yaml consumes it via ${GONZALO_VERSION}. Also refresh
the digest-pin example comment.
Verified: `docker compose config -q` passes for the base file and all six
overlay combinations; the resolved gonzalo service image is
ghcr.io/caliban-ai/gonzalo:0.2.0.
